Earlier this year my husband and I were following the Paleo "Diet" and if you can believe it, we actually enjoyed it! Since we have been back from our holidays we have be a hard time getting back on track, so, starting today we are going to be doing a 30 DAYS OF PALEO challenge!
If you are unfamiliar with the Paleo Diet you have been living under a rock.....

The Paleo diet consists mainly of fish, grass-fed meats, eggs, vegetables, fruits + nuts. It excludes grains, legumes, dairy, potatoes, refined salt, refined sugar and processed oils. The theory is that you would eat the same diet as the "caveman" presumably did, minus the hunting and gathering. You can find TONS of information about the diet online, here is a cheat sheet I found. It is very simple.
Thru the month of November I will share our Paleo meals - which ones were good and which ones will not be repeated. Anyone up to doing the challenge with us?
