[FROM MY KITCHEN] paleo pumpkin banana mini loaf




Paleo Pumpkin Banana Mini Loaf
*makes 2 loaves

1 1/3 cups of almond flour
1 tsp baking soda + baking powder
1/2 tsp salt
2 tbsp cinnamon
1/2 tsp nutmeg
2 eggs
3/4 cup pumpkin puree
1 tsp vanilla
2 tbsp agave syrup
1 medium banana, mashed
1/4 cup of chopped pecans

1. preheat oven to 350'
2. in a medium bowl, combine all the the dry ingredients and set aside
3. in a small bowl, combine all wet ingredients
4. add the wet ingredients to the dry + stir
5. let mixture sit for 15-20 minutes before pouring into a small bread pan
6. sprinkle chopped pecans on top of mixture once in pan
7. bake for 45 minutes, test with a toothpick to make sure loaf is done
8. leave the loaf in the pan for 10 minutes before removing

[30 DAYS OF PALEO] links!

We are now on day 4 of our 30 Days of Paleo diet, we made it thru the weekend unscathed :) I spent some time meal planning and wanted to share some links to really good resources.

If you are on Instagram, whaleopaleo is awesome! They post food/recipe pictures with a quick and easy description on how to prepare. 

PaleOMG is my go to for baking - the recipes are easy and generally turn out. I have found that baking with coconut flour or almond flour takes some getting used to and it is disappointing when you spend the time making something and it isn't even edible :(

Nom Nom Paleo has some of the tastiest recipes I have found. They are a little more involved but worth it!

[30 DAYS OF PALEO] starts today....

Earlier this year my husband and I were following the Paleo "Diet" and if you can believe it, we actually enjoyed it! Since we have been back from our holidays we have be a hard time getting back on track, so, starting today we are going to be doing a 30 DAYS OF PALEO challenge!

If you are unfamiliar with the Paleo Diet you have been living under a rock.....

Just kidding ;)

The Paleo diet consists mainly of fish, grass-fed meats, eggs, vegetables, fruits + nuts. It excludes grains, legumes, dairy, potatoes, refined salt, refined sugar and processed oils. The theory is that you would eat the same diet as the "caveman" presumably did, minus the hunting and gathering. You can find TONS of information about the diet online, here is a cheat sheet I found. It is very simple.



Thru the month of November I will share our Paleo meals - which ones were good and which ones will not be repeated. Anyone up to doing the challenge with us?
